Before sharpening a knife with a manual sharpener, try holding up a folded sheet of paper and cutting it down with the knife. If the knife cannot cut through the paper without stopping, insert it into the “rough” groove of a manual grinder. Pull the knife blade through the groove 3 to 6 times, follow the contour of the blade and move from base to tip. Then pull the knife through the “fine” groove once or twice to refine the edge.
