To make mulled wine, first put cloves, cinnamon, nutmeg and ginger in a non-reactive pan. Slice an orange and a lemon and add these to the pan with the spices as well. When your citrus is in, pour in two bottles of red wine and add a little sugar. When your pan is full of your ingredients, heat it on low heat for about 10 minutes so that the liquid drops. To infuse the flavors, keep the pan on a very low barrel for up to one hour. Since the wine will lose some of its alcohol while it sucks, you can add a splash of brandy if you like. When your wine is ready, serve it warm in thick, heat-proof glasses. For more tips, including how to roast your spices before putting them in the pan, read on!
