How to make loaded baked potatoes

Loaded baked potatoes can be one of the best comfort foods you can make at home. Bake the potatoes in advance and set up a topping bar so that everyone can adapt their meal. This is a great way to clean out your refrigerator because so many ingredients are perfect toppings. Load your potatoes with cheese, leftover meat, vegetables and your favorite sauce. Then put in a creamy, filling baked potato that is just the way you want it!

  • 4 large potatoes like Russets or Yukon Golds
  • of rapeseed, vegetable or olive oil
  • 1
    /2 cup (115 g) butter, diced
  • Kosher salt and freshly ground black pepper to taste
  • Toppings such as bacon, cheddar, sour cream and chives

Make 2 to 4 servings

  1. Preheat the oven and place a grill on a baking sheet. If you do not have a grill and baking sheet, place the potatoes directly on the oven rack. You may want to place a piece of aluminum foil under the rack to catch oil droplets.[1]

  2. Point holes in 4 potatoes with a fork. Scrub 4 large potatoes such as Russets or Yukon Golds under cold running water to rinse off dirt. Then grab a potato and use a fork to knead the potatoes about 10 times.[2]
    • Because potatoes contain a lot of water that turns into steam when they bake, the holes prevent the potatoes from splitting or exploding.
  3. Rub the potatoes with oil and place them on the rack. Drizzle rapeseed, vegetable or olive oil on each potato and use your fingers or a pastry to spread the oil all over the skin. Then place the smeared potatoes on the grill so that they do not touch each other.[3]
    • The oil helps the potato peels to sharpen when baked. If you skip lubricating the potatoes, the skins will be dry and clear.
  4. Bake them for 1 hour or until the middle of the potatoes is tender. Carefully transfer the sheet with the grill and the potatoes to the preheated oven. Boil the potatoes for 1 hour. Then insert a knife in the middle of a potato to see if it slides out easily. If it does not, cook the potatoes for another 5 to 10 minutes and check again.[4]
    • If you have a short time, microwave the potatoes for 5 minutes. Then bake them in an oven for 20 minutes.
  5. Cool the potatoes for 5 minutes. When the center of the potatoes is tender, take the sheet out of the oven and put them on the stove. Let the potatoes cool on the grill for 5 minutes so that they are a little easier to handle.[5]

    • If you put the potatoes directly on the shelf, use oven gloves to take them out of the oven.
    • Do not cover the potatoes as they will cool, otherwise you will catch moisture and clear the skins.
  6. Divide each potato lengthwise and spoon the meat into a bowl. Put a lightly chilled potato on a cutting board and carefully cut through it lengthwise. Scoop out the soft potato flesh with a spoon and drop it into a large mixing bowl. Repeat this for each potato and set the skins aside.[6]
    • If the potatoes are still hot, use an oven glove so you can hold the potatoes and scoop out the meat.
  7. Mash the potatoes with butter, salt and pepper. Add 1/2 cup (115 g) diced butter to the bowl with the potatoes along with as much salt and pepper as you like. Then use a vegetable mask to puree the potatoes roughly. If you want a thick consistency, mash until the butter has incorporated or continue to mash until the potatoes are smooth.[7]
    • Plan to use about 2 tablespoons (28 g) of butter for each stuffed potato.
    • For really coarse potatoes, use the sticks on a fork instead of a vegetable machine to break up the meat.
  8. Spoon back the spiced potatoes into the skin. If you want to make small loaded baked potatoes, fill each of the skins with some of the mashed potatoes or overfill only half of the skins. Then add any toppings you like and enjoy![8]
    • Serve the potatoes as soon as you add them or put them back in the oven for 5 minutes to melt cheese or reheat them.

[[[[Edit]Fill them with tasty ingredients

  1. Fill the potatoes with bacon pieces, chili or meat to make a filling meal. For classic loaded baked potatoes, fry chopped bacon until crisp and sprinkle it over the potatoes. You can also spoon your favorite chili or seasoned minced meat on top.[9]

    • This is a great chance to use leftovers from previous meals. For example, leave pork, shredded beef or carnitase on the potatoes.
  2. Sprinkle with shredded or crumbled cheese to give the potatoes a creamy taste. One of the best parts of a loaded baked potato is the sticky, melted cheese. Fill the potatoes with the cheese you have on hand:

    • Pepper jack
    • Feta
    • Smoked gouda
    • Mozzarella
    • Nacho-ost
  3. Add cooked vegetables for nutrition and a color palette. Make a complete meal by including a variety of colorful vegetables. Chop raw vegetables or steam, grill and roast them before spreading them over the potatoes. Try some of these great combinations to get you started:[10]

    • Steamed broccoli florets with roasted peppers
    • Grilled sweet corn with diced jalapenos
    • Caramelized onion with mushrooms
    • Diced avocado with chopped tomatoes
  4. Spoon a creamy or spicy sauce over the potatoes for extra flavor. Add creamy or bold flavor with a splash of salsa, sour cream or your favorite sauce such as barbecue sauce, gravy or hot sauce.[11]

    • Replace Greek yogurt with sour cream if you are trying to reduce calories.
  5. Garnish the loaded baked potatoes with chives or green onions. To give the loaded baked potatoes a slightly sharp taste, chop some green onions or chives and sprinkle them over the top.[12]

    • If you do not want the spicy taste of green onions, use freshly chopped herbs such as parsley or basil.

  • For the most crunchy skin, skip wrapping the potatoes in foil as the foil absorbs moisture and moisturizes the skin.[13]
  • If you still have baked potatoes, mash them lightly and mix them with a creamy white sauce. Spread the mixture in a saucepan and spread toppings over it. Then bake the pot until it is bubbling.[14]
