To germinate mung beans, start by rinsing them off and placing them in a clear jar. Then fill the jar halfway with cold water so that the beans are covered. Let the beans soak at room temperature for 8 to 12 hours until they swell and then empty and rinse them. When you have emptied all the water, put the jar in a cool, dark place for 12 hours.
