To cut fresh rosemary from your garden, cut off sprigs of rosemary at the base where they come from the main stock. Cut only up to a third of the sprigs of rosemary at a time so that the plant continues to grow. Rinse twigs with cold water to clean them and then dry them with paper towels. Run your fingers along the stems to pull off the leaves. Then arrange the leaves in a pile and use a chef's knife to cut across the pile horizontally.
